last week at my Brothers Birthday Party my Grandmother and I decided to experiment with a few Recipes, and hopefully over the next few weeks I will be able to share them with you :) the lentil Potato salad was my favorite! I hope you love it to!
what you will need:
- small lentils ( 1 cup )
- Salt and pepper
- fingerling potatoes ( 1 pound )
Ingredients for Dressing
- red wine vinegar ( 2 tablespoons )
- garlic cloves, minced or smashed to a paste (I use less) ( 1 to 2 )
- smooth Dijon mustard ( 1 tablespoon )
- your favorite olive oil ( 1/4 cup )
- capers, rinsed if salted, drained if brined, and roughly chopped ( 2 teaspoons )
- cornichons or other sour gherkins, roughly chopped ( 2 tablespoons )
- scallions, thinly sliced ( 1 to 2 )
- small bay leaf ( 1 )
- salt and pepper to taste
Directions: we Boiled the Potatoes, cooked the lentils, and then sliced the potatoes and added them to the lentils. Next we added all of the dressing ingredients together in a bowl then you simply mix and serve.

Today I want to go over my amazing Hummus (that I mentioned yesterday). this is a recipe that has been in my Family for ever. It is from my Grandfathers side of the family, and when my Grandparents first got married my Great grandmother showed my Grandmother how to make Hummus, tubuli, and so much more! since then my Grandmother has tought my Mother, and Myself. and I want to keep it going!
1 can (8oz) Garbanzo beans
3 small cloves fresh garlic
1 lemon squeezed
2 teaspoons olive oil
Salt and pepper to taste
Blend everything in a food processor until smooth. Keep in refrigerator for up to a week
today I was in the mood for a healthy nutritious lunch so I made and amazing Chard wrap. you can do it with really any shredded vegetables,these are just the ones I happened to have. I like the chard leaves. the are big and flexible and are full of protean and fiber but you can use Mustered Greens, Lettuce or really anything. (even rice paper) These yummy rolls are stuffed with Shredded Purple Cabbage, Fresh Shredded Carrots,thinly Sliced Yellow Bell Peppers, sliced Greek Olives, and wrapped in a Chard Leaf. (and a little salt and pepper). I then whipped up some (to die for) hummus to dip it in.
and my lunch was complete! (and Delicious)
